OUR WHISKEY PROCESS
Cabbage Hill Wheat Whiskey is a celebration of traditional spirits and the heritage of Pendleton, Oregon. The heart of wheat production in the Pacific Northwest, Umatilla County has surrounded Pendleton with a sea of wheat since the 1800s. This heritage inspired our distillers to sift through wheat growers, species of wheat, barrel styles, and quality ingredients to hand craft Pendleton, Oregon’s first locally produced aged whiskey.
Starting with 80% Soft White Winter and Club wheat produced by Bracher Farms, we add 20% Malted Barley produced in Baker City, Oregon. After mashing these grains with water from underground aquifers fed by the Blue Mountains, we add specially designed yeast to bring out the raw grain characteristics and flavor for fermentation.
We ferment our wash “on grain” to make sure we extract as much flavor from our high quality ingredients as possible. Finally, our open fermenters allow our yeast to constantly interact with the beautiful dry air and temperature of Eastern Oregon.
After fermentation, we move the entire grain filled wash into our pot still for our first distillation - called low wines. This process is repeated until we have enough low wines to fill the still again. This second distillation creates the beautiful final spirit of an intense vanilla smoothness from the wheat coming off the still at just under 160 Proof.
After we proof the spirit to barrel strength, 125 Proof, we will let the whiskey age in american oak barrels. Now, it’s a waiting game to let the barrels add their color, flavor, and develop the depth of character we know and love. Find bottles at our distillery in Pendleton, Oregon.
DISTILLER’S NOTES
Our first batch of Cabbage Hill was barreled in August of 2018 making our first release just over 2 years old. With a beautiful chestnut color and smooth caramel toffee flavors, we wanted to keep this delicious whiskey at a slightly higher 90 Proof to maintain the character we’ve waited for so long to experience. When you grab a bottle you are experiencing a celebration of local history and culture - OREGON WHEAT. Grown and distilled right here in Pendleton, Oregon. We are proud to share with you the decades of farming experience and years of patience in distilling it takes to provide this bottle of whiskey.
Made with Soft White Winter and Club Wheat grown, harvested, fermented, distilled, and aged in oak barrels in Eastern Oregon.
